Winter Wheat

From the Rabelöf Estate in Southern Sweden

THE RABELOF ESTATE IS DEDICATED TO PRODUCE THE BEST WINTER WHEAT FOR ELYX

Every drop of Absolut Elyx is produced using winter wheat grown on one single estate in Southern Sweden – the Råbelöf Estate. This family owned farm has soil dating back to the 1400s and the heritage and know how of generations of Swedish farmers.

The climate in southern Sweden is ideal for producing winter wheat, with its dry, cold winters and long warm summers, contributing to yields that are typically twice the global average.

Råbelöf has the perfect combination of soil type, micro-climate, topography and tradition to grow wheat high in starch and medium in protein. This terroir allows us to grow an optimal grain which in turn allows us to distill a vodka of exceptional quality where the profile of the wheat really can be celebrated.

Winter Wheat is planted in September and harvested in August.

Winter wheat is cultivated cyclically – sown in September, the wheat kernels begin to germinate but are slowed down as winter approaches and a thick frost falls over the south of Sweden. These cold winter temperatures create a hibernation effect for the wheat.

When the spring arrives and the frost dissipates, the wheat awakens from its slumber and bursts back to life. Together, with this 6 month head start and the long, warm summer days, the wheat grows at an accelerated pace, creating a high starch content, which we value immensely.
